it's all good

If you watched Downton Abbey 2 last night ~ WASN'T IT FANTASTIC??? Oh my, fun fun FUN. I spent a late night at my Mom's house watching with her and eager for next Sunday's episode for another girl's night. I knit a bit and excited about my hat-in-progress!


Found this healthy recipe on Pinterest and thought I'd fix it tonight. I'm not a cottage cheese fan (at all) but when it's cooked in a casserole, it blends in. Hope it's good!

Chicken Taco Casserole

Cooking Spray
1 lb Ground skinless chicken breast
1/2 cup chopped onions
1/2 cup chopped bell peppers
1 clove garlic
1 pkg taco seasoning mix
8 oz taco sauce
1 cup fat-free sour cream
1 cup fat-free cottage cheese
1 cup low-fat tortilla chips, whole or broken up
1 cup low-fat cheddar cheese, shredded
3/4 cup salsa

Directions:

1. Preheat oven to 400 F. Spray cooking spray on bottom of a 2 quart casserole dish; set aside.

2. In a skillet, cook chicken, onion, peppers and garlic clove until tender. Add seasoning mix and taco sauce; set aside.

3. In a medium size bowl, combine sour cream and cottage cheese; set aside. Place half the broken chips in bottom of the casserole dish. Add meat mixture to cover the chips, then cover the meat with sour cream mixture.

4. Sprinkle with cheese and remaining crushed chips. Bake, uncovered, for 30 minutes or until cheese has melted. Top with the 3/4 cup salsa.

Hmmm, that looks interesting! I'll have to try it. I meant to tell you, I made the cranberry salsa dip and OH. MY. GOSH. I am currently running around the supermarkets here, trying to find cranberries so that I can freeze them & make the salsa year round. I didn't use the cream cheese--we just dug in with tortilla chips like savages.

Downton Abbey was wonderful, it did not disappoint! I can't wait for next week. I tried to stitch while watching but didn't get much done I think I need to knit instead.
The casserole recipe sounds great, I will have to try it.

If I'm informed right we already had the full season 2 aired. I loved it, but my kids didn't enjoy it that much, so I missed a few episodes.

We JUST started watched season 1 of Downton this weekend and we are more than hooked! In fact, I am very tired today because we watched one too many episodes last night!! =)

I too have loved Downton Abbey and now have to wait until the new series in the Autumn here in the UK. Tonight we have Edwin Drood being broadcast so looking forward to that. Thanks for the comment on my knitting on my blog ,love your grey hat .
